We welcome kids ages 7 to 12 to join us for a five-day camp featuring baking and pastry techniques that can easily be recreated at home for friends and family. We will focus on following recipes, classic techniques, presentation, working cleanly and safely in the kitchen, and exploring new flavors. All recipes will be measured ahead of time so we can focus on the techniques, but proper measuring practices will be covered in class. Day 1: Quick Breads and Short Pastry (Lemon-Vanilla Scones with Lemony Drizzle, Individual Chocolate Chip-Banana Bread Loaves with Whipped Honey Butter, Blueberry Muffins with Streusel Topping). Day 2: French Pastry (Cream Puffs with Pastry Cream, Chocolate Mousse, Cinnamon-Sugar Palmier Cookies). Day 3: Cookies and Bars (S'mores Chocolate Chip Cookies with Marshmallows, Chocolate Drizzle and Graham Crackers, Lemon Bars with Oat Crumble, Carrot Cake Whoopie Pies with Cream Cheese Frosting). Day 4: Cakes (Strawberry Cupcakes with Strawberry Buttercream, Chocolate Flourless Cake with Raspberry Sauce, Individual Vanilla Layer Cakes with Vanilla Frosting and Sprinkles). Day 5: Fruit Desserts (Mixed Berry Crostata with Whipped Cream, Individual Peach Cobbler, Cherry Turnovers with Puff Pastry). In this hands-on class, students will be paired in groups of four and work together as a team to prepare the recipes.
